Unire assieme tutti gli ingredienti in modo da ottenere un impasto abbastanza sodo (non lavorarlo eccessivamente perché si potrebbero formare delle bolle durante la cottura), fare riposare per circa un' ora coperto da uno strofinaccio. Suddividere l'impasto in 4 parti che, una volta distese con il mattarello, devono formare delle "piade" di circa 25-30 cm. di diametro. Lo spessore dipende molto dai gusti e può andare da due fino a sei millimetri Disporre su una metà della piada il ripieno, richiudere quindi il cassone, facendo aderire bene i bordi per evitare che il ripieno fuoriesca durante la cottura, utilizzando anche la parte ricurva di una forchetta per sigillare bene.
Cuocere ora i cassoni sulla piastra o sulla padella: la cottura và eseguita a fuoco medio-basso, in modo che si cuocia non solo la pasta ma anche il ripieno, e il cassone và rigirato spesso. Far attenzione alla cottura non solo dei due lati ma anche dei bordi . Servire subito.

I know, this is not a particularly refreshing summer dish, but you can't eat salad and tomatoes forever! The cassoni are a typical dish of Romagna, and they consist of a piada, rolled thinner, stuffed, folded, sealed and cooked a bit longer (than the piada). The classic filling is made with rosole, herbs of the Romagna area or also with spinach and chard, tomato and mozzarella or whatever you prefer. Piada and cassone should be cooked with a flat heavy iron pan or earthenware pan, if you don't have them just use a non-stick saucepan. Preparation is not particularly long, the dough doesn't need to rise as long as the pizza dough, the cooking is surely faster and last but not least, as you don't need to use the oven you can prepare it even now without any problem. The pictures this time don't do justice to the dish, I took them at night, which means that I used artificial - and yellow - light.
Makes 4 cassoni
Ingredients: 500gr (2.2cup - 17.6oz) flour - 75 (0.325 up - 2.6oz) gr. lard - 1 pinch of salt - Water or milk as needed, warm - 7gr (1 ½ tsp) dried yeast or 2gr (½ tsp)baking soda*
* I used 10gr (2tsp) brewer's yeast
Mix together all ingredients until you'll have a firm dough (don't knead it too much, otherwise during cooking some bubbles will come out on the surface), then leave it to rest for about an hour, covered with a cloth. Now divide the dough in 4 and roll in 25-30 /(10-12inch) diameter "piade". The thickness depends on you, from 2mm (0.08inch) to 6 mm (0.2inch). Place the filling on half of the piada, fold the dough and seal the edges together by pressing down lightly. Then fold the edge of the dough up, and create a seal by using a fork. Cook the cassoni on the pan at medium-low heat: you need to turn it often in order to cook the dough but also the filling and the edges. Serve hot.
